Happy Pancake Day!

Everyone loves Pancakes, even those that are Dairy Free! These three ingredient pancakes are super easy, super healthy and delicious – so you can make them any day of the week.

Add your very own toppings, or enjoy my tasty combination.

Three Ingredient Pancakes

Who said you can't enjoy delicious pancakes when you're going dairy free. These quick super easy banana pancakes, topped with coconut yoghurt and fruit will definitely start your day right.. guilt free!

Course Breakfast

Ingredients

Pancake Mixture

  • 1 Banana
  • 2 Eggs
  • 1 Sprinkle of Cinnamon

Toppings of Your Choice

  • Handful of Raspberries
  • Handful of Blueberries
  • 1 tbsp Soy Yoghurt/ w coconut
  • 1 tbsp Honey

Instructions

  1. Mash Banana  Peel and chop banana into thin slices. Using a fork, mash the banana so no large lumps remain.

  2. Add the Eggs  Whisk the eggs in a separate bowl, then pour over the banana. Stir until completely combined. Add a sprinkle of cinnamon.

  3. Heat a frying pan  Warm some coconut oil in a pan. When hot, drop a couple of tablespoons of the batter into the pan.

  4. Cook the pancakes  Cook for around 2 minutes on each side. Be careful when flipping, doing it slowly works best. 

  5. Repeat steps

  6. Add your toppings  My favourite is a handful of blueberries and raspberries, topped with Alpro soy coconut yoghurt and a squeeze of honey.
